Intorchiate, Scaldatelli, Taralli

Treccine di farina di grano tenero impastata con olio extravergine di oliva, vino bianco, acqua, sale e lievito, prima bollite quindi farcite con mandorle e cotte in forno. Esiste una variante dolce con aggiunta di zucchero nell’impasto. Con lo stesso impasto e la stessa procedura, ma senza lievito e con l’aggiunta di semi di finocchio, si producono gli scaldatelli e i taralli.

“Intorchiate” are plait shaped biscuits made with flour mixed with extravirgin olive oil, white wine, water, salt and yeast, they are boiled first, dressed with walnuts and then baked.
A sweet variety is made adding sugar to the mixture.
“Scaldatelli” and “taralli” are made with the same procedure, adding fennel seeds but without yeast.

It’s a magic time when you spend all day preparing the dough and set all the ingredients to make a dinner pizza with friends, specially if it’s the first time you try the oven!

Mark and Gianni did a great job and after 20 kind of different pizza, good beers and lots of laughter, the day ended really well!
